Security video showed an employee of Grand Forks’ Italian Moon restaurant stealing money from the till and altering customer’s checks in a scam that netted him $25,000 over a year, according to prosecutors and the employee.

Jason Grundahl, 32, pleaded guilty Thursday in state district court in Grand Forks to felony theft.

In return, prosecutors promised to recommend he serve only one year out of a five-year jail sentence with five years on supervised probation.

Judge Sonja Clapp accepted his plea and scheduled sentencing for Nov. 6.

If the county jail approves, Grundahl could serve his year on work release so he can pay restitution to the Moon at $425 per month. He has been working at a Fargo pizzeria, court documents show.
